Tapas are a common bar food in Spain, something to tide you over until dinner, which is rarely eaten before 10 p.m. The small portions of meats, sausages, seafood, vegetables and savoury pastries are served hot or cold, made to be shared, with others over a glass of red wine, beer or sparkling cava.
Salgado, 39, initially considered opening a Mediterranean-style restaurant on the Danforth in 2002. But he decided instead to “come full circle,” recreating his family's Bathurst St. Spanish restaurant, Embrujo Flamenco, which was open from 1972 to 1986. It's the cuisine he grew up with and a style of cooking he is passionate about. And it shows in what comes out of his kitchen.
